The opportunity:
The Sous Chef for Swarthmore Dining will assist the Executive Chef in managing the overall College dining and catering kitchen operations by supervising all kitchen personnel and food production for the Dining Center. In addition, the Sous Chef will be responsible for customer relations, developing and executing a menu plan, budgeting labor, and overseeing the maintenance of all kitchen equipment within the main kitchen they will manage. The Sous Chef will design, supervise, coordinate and participate in the activities of the cooks and other kitchen personnel.
This position is recognized as the technical expert, teacher and trainer for cooks and prep cooks within the College. The Sous Chef will be responsible for creating training, implementing menus, sustainability, quality assurance programs and scratch cooking. The incumbent will manage daily operations of culinary services within the main Dining Center. Oversees activities of the cooks and bakers and works closely with those positions in supporting trendy, healthy and sustainable food for Swarthmore students and the Swarthmore community.

Essential Responsibilities
- Assist Executive Chef in all aspects of the dining operations.
- Manages the daily culinary operation of the Dining Center.
- Maintains a high level of customer satisfaction by being responsive to customer needs.
- Ensures a clean, safe and sanitary environment for customers and employees along with reporting and rectifying safety hazards by training and enforcing accountability for food safety and kitchen safety.
- Assist in generating more accessible healthy food options for the operation.
- Assist monitoring the quality of menus prepared and purchased.
- Assist in the development of all menus and cycles for operations.
- Assist with the implementation of the inventory system to track food cost and purchases
- Supervises food preparation and resolves problems affecting production and/or quality.
- Ensures production standards for the bakery operation for all dining operations.
- Manages training of knife skills, equipment and uniform safety, departmental rules and the Colleges expectations.
- Manages onboarding of new culinary staff, up to and including: food safety, recipe compliance, food standards, operational expectations, and overall organization.
- Prepares kitchen staff schedule for the Dining Center.
- Helps to manage budgets for ordering and inventory control.
- Supervise 15-20 Culinary associates, assistants, and bakers.
- Supervise 7-8 Culinary prep associates.
- Support with staffing documentation both positive and negative, to include employee reviews and new hire documentation for staff.
- Develop and train staff in food safety, production, record keeping, kitchen organization and policy adherence.
- Ensure all food safety and HACCP standards are met through proper record keeping and employee behaviors.
- Support with daily production, Develop and maintain production systems through record keeping, organization and employee behaviors.
- Assist in managing the front-line associates to ensure that they are in full uniform, following Swarthmore food safety standards, have correct hair restraints, and are meeting culinary standards.
- Reads, interprets, updates, and follows standardized recipes. Monitors the accuracy of the recipes as they are used.
- Provides feedback on use of new products.
- Participates in continuing education programs.
- Ensures high quality food production for day-to-day operations by sampling, batch cooking and working with all cooks daily.
- Ensures a clean, safe and sanitary environment for customers and employees along with reporting and rectifying safety hazards.
- Confirm accuracy on daily forecasting, post production & menu execution.
- Assist in creating, planning, and executing food marketing programming for Dining operations.
Required Qualifications
- Associates degree in culinary or business with 2 or more years of related experience, or 5 years of experience in a similar role.
- Valid Serv-safe Certification.
- License/Certification – Valid Driver's License.
- PA Child abuse and FBI Clearance.
- Ability to drive a box truck.
- Demonstrated experience in managing food costs and labor costs.
- Demonstrated problem-solving ability and strong commitment to customer service in a diverse community.
- Demonstrated record of teamwork, collaboration and partnership with numerous operations, services, colleagues and programs.
- Proficiency in Microsoft office, e-mail, recipe software, and inventory systems.
- Experience in large scale catering and event experience.
- Experience in budget development, financial systems, and operating budget management
- Ability to lift and carry objects weighing up to 50 lbs.
- Ability to carry heavy objects in close quarters and on stairs.
- Ability to carry these objects for extended periods and hand, arm and back strength to do lifting, carrying motions for extended time.
- Ability to perform kneeling, bending, squatting,reaching motions for extended times.
- Ability to work in kitchen conditions with long periods of standing.
- Fast paced, high volume environment.
- Seven day operation, including nights and weekends.
- Able to adapt to ever-changing demands of college dining services.
- Work in inclement and severe weather conditions
- Could be noisy
- Bachelor's degree in food service administration, institutional management, nutrition, dietetics or related area.
- 3 or more years of progressively more responsible supervisory and administrative experience in a high volume food service operation that offers a varying daily menu.
- Working knowledge of residential food service programs in a college
